Abstract

Cilj ovog rada bio je ispitati utjecaj tri različita kultivara uljane repice i tri načina proizvodnje na udio fitosterola, skvalena i tokoferola. Repičino ulje je svojstveno po visokom udjelu β-sitosterola, kampesterola i brasikasterola, a od tokoferola je najzastupljeniji γ-tokoferol. No, ulja ovisno o kultivaru imaju različite udjele pojedinih komponenti. Ulje dobiveno iz hibrida PR 46 W 10 okarakterizirano je većim udjelom Δ5-avenasterola, Δ7-stigmasterola i kampesterola, dok ulja proizvedena iz sjemena sorte Robust sadrže više α-tokoferola, kampestanola, brasikasterola, stigmasterola i ukupnih sterola. Ulja proizvedena iz hibrida Toccata odlikuju se većim udjelom Δ7-avenasterola, a manjim udjelom β-sitosterola. Ulja proizvedena ekstrakcijom organskim otapalima sadrže veći udio ukupnih fitosterola od ulja dobivenih prešanjem. Kultivar, način proizvodnje i njihova interakcija imaju značajan utjecaj na udio pojedinačnih fitosterola i tokoferola te ukupnih fitosterola.

Abstract (english)

The aimof thisstudy was toexamine theinfluence ofthree differentrapeseed cultivars andthree of production processes on the content of phytosterols, squalene, and tocopherols. Rapeseedoilischaracterizedbya highcontent ofβ-sitosterol, campesteroland brassicasterol.The most abundanttocopherolis γ-tocopherol. However, depending on thecultivar,oils have different amount of individual components. Oil obtainedby thehybridPR W 1046is characterized byagreater proportion ofΔ5-avenasterol, Δ7-stigmasterolandcampesterol, whileoils producedfrom the seedsof the Robust cultivarcontain moreα-tocopherol, campestanol, brassicasterol, stigmasteroland totalsterols. Oilsproducedfrom thehybridToccataarecharacterized bygreater amountof Δ7-avenasterol andlower portionofβ-sitosterol. Oilsproducedby the solvent extractionhave higheramount of totalphytosterolsthanthe onesobtainedby pressing.Cultivar, extraction processand theirinteractionshave significant influence onthe contentof individualphytosterols andtocopherols, and totalphytosterols.
