Abstract

Većina namirnica i krmiva osjetljiva je na kontaminaciju plijesnima u različitim fazama proizvodnje, prerade, transporta i uskladištenja. Tako klimatski uvjeti i uvjeti prilikom procesa proizvodnje, transporta i uskladištenja mogu biti uzrok porasta plijesni, kao i biosinteze mikotoksina. Stoga su u ovom radu istraženi uvjeti rasta plijesni Aspergillus ochraceus NRRL 3174 u čistoj i mješovitoj kulturi s Fusarium graminearum 1244 u tekućem supstratu (YES-podloga) i biosinteze okratoksina A tijekom 28 dana. Istraživanja su provedena u prisutnosti izolata bakterija mliječne kiseline pri 28 oC. Rezultati su pokazali da svi izolati bakterija mliječne kiseline u ovisnosti o broju stanica u podlozi i vremenu uzgoja, inhibiraju i rast plijesni i nakupljanje toksina. Određivanje koncentracije okratoksina A provedeno je kompetitivnim ELISA testom.

Abstract (english)

Most food and feed are sensitive to mold contamination in various phases of production, processing, transport and storage. Thus, climatic conditions and conditions during the production process, transport and storage can cause mold growth and mycotoxin biosynthesis. Therefore, in this research were examined the growth conditions of the mold Aspergillus ochraceus NRRL 3174 in pure and mixed culture with Fusarium graminearum 1244 in liquid substrate (YES) and the biosynthesis of ochratoxin A during 28 days. Investigations have been carried out with cell suspension of lactic acid bactera isolates. The results have shown that depending on the number of cells and cultivation time, all isolates of lactic acid bacteria are inhibiting the mold growth and the toxin accumulation. Determination of ochratoxin A concentration was performed by competitive ELISA test.
