Abstract | Antinutrijenti su produkti biljnog metabolizma i praktički ne postoji namirnica biljnog porijekla u kojoj nisu prisutni. Antiproteini, antiminerali i antivitamini na različite načine ograničavaju dostupnost određenih nutrijenata. Najčešće su istraživani oni iz leguminoza i žitarica. Brojne metode koje se primjenjuju za njihovo uklanjanje manje su ili više djelotvorne kada se primjenjuju samostalno, no kombiniranom primjenom dviju ili više metoda, količina prisutnih antinutrijenata može se gotovo u potpunosti reducirati. Metode se razlikuju: od konvencionalnih načina termičke obrade sa ili bez prisutnosti medija u kućanstvima, pa do genetičkog modificiranja. Osim njihovih negativnih utjecaja na biološku dostupnost (makro i mikro) nutrijenata, inhibitori lipaza, lektini, fitati i drugi antinutrijenti, imaju i potencijalnu primjenu u kliničkoj praksi, medicini i farmakologiji. |

Parallel abstract (English) | Antinutrients are products of plant metabolism and there is practically no food of plant origin in which they are not present. Antiproteins, antiminerals and antivitamins limit the availability of certain nutrients in many different ways. Those found in legumes and cereals are most often studied. When used independently, numerous methods for their removal are more or less effective, but combined application of two or more methods can almost completely reduce the present volume of antinutrients. Methods vary from conventional methods of heat treatment with or without the presence of media in households to the genetic modification. Besides their negative impact on the bioavailability of (macro and micro) nutrients, these lipase inhibitors, lectins, phytates and other antinutrients have potential application in clinical practice, medicine and pharmacology. |
