Abstract

Nepoželjne senzorske promjene u vinu često su uzrokovane visokom koncentracijom teških metala. Prisutnost željeza, bakra i cinka u visokim koncentracijama dovodi do organoleptičkih promjena i to naročito u mirisu, okusu (po metalu), ali i izgledu samog vina. Stoga je poželjno brzim i učinkovitim metodama odrediti prisustvo i koncentraciju spomenutih metala u vinima. Ionska kromatografija (IC) i induktivno spregnuta plazma optičko emisijske spektroskopije (ICP OES) korištene su kao analitičke metode za određivanje 9 teških metala u vinu Pinot sivi, križevačkog vinogorja, privatnog proizvođača. Kemijskim postupcima određeni su i osnovni parametri kakvoće spomenutog vina: ukupne kiseline, hlapive, kiseline, slobodni i vezani sumpor, šećer te alkohol. Rezultati kemijskih i analitičkih metoda analiziranog vina su u skladu s vrijednostima u literaturnim izvorima za tu vrstu vina.

Abstract (english)

Undesirable sensory changes in wine are often caused by high concentrations of heavy metals. The presence of copper, iron and zinc in high concentrations leads to organoleptic changes, especially in smell, taste (metallic), and in appearance of wine. Therefore, it is desirable to have fast and effective method to determine the presence and concentration of these metals in wines. Ion chromatography (IC) and inductively coupled plasma optical spectroscopy emission (ICP OES) were used as analytical methods for determination of nine heavy metals in wine Pinot Grey, Križevci wine region, private producer. Using chemical analyses, basic parameters in mentioned wine were defined: total acidity, volatile, acid, free and bound sulfur, sugar and alcohol. The results of chemical and analytical methods of analyzed wine are consistent with the values in the literature sources for this type of wine.
