Utjecaj agroekoloških uvjeta na sekundarne metabolite u tri sorte brokule (Brassica oleracea var. botrytis L.)

Abstract

Mnoga epidemiološka istraživanja ukazuju da Brassica povrće, a brokula osobito, ima značajnu ulogu u zaštiti od nastajanja karcinoma, budući da je bogat izvor glukozinolata kao i flavonoida te vitamina i minerala. Razlika u sastavu i količini navedenih bioaktivnih sastojaka u povrću ovisi o genotipu i o mnogim agroekološkim uvjetima. U ovom radu praćen je utjecaj agroekoloških uvjeta na tri sorte brokule uzgojene 2007. i 2008. godine u proljetno-ljetnom i ljetno-jesenskom roku sjetve. Provedena je analiza pojedinačnih i ukupnih glukozinolata, ukupnih polifenola i njihova antioksidacijskog kapaciteta. Udjel ukupnih glukozinolata u istraživanim sortama brokule jest između 8,42 i 22,48 µmol g-1 uzorka, dok je udio polifenolnih spojeva u istraživanim sortama u rasponu od 9,40 do 26,29 mg g-1 s.t. Određivanje antioksidacijskog kapaciteta provedeno je spektrofluorimetrijskom ORAC metodom. Veću antioksidacijsku aktivnost imaju uzorci s većom koncentracijom polifenola. Utvrđen je statistički značajan utjecaj sezone na količinu polifenola, ukupnih glukozinolata i ORAC vrijednosti.

Abstract (english)

Numerous epidemiological studies indicated that Brassica vegetables, and broccoli in particular, protect humans against cancer since they are rich sources of glucosinolates as well as phenolics, vitamins and minerals. Variation in content of bioactive components in vegetables depends upon genotype and agroecological conditions. In this study we analyzed the influence of agroecological conditions on three broccoli cultivars grown in 2007 and 2008 year in spring-summer and summer-autumn growing cycle. We analyzed total and individual glucosinolates, total polyphenols and antioxidative capacity. The content of total glucosinolates in broccoli cultivars were in the ranged from 8.42 to 22.48 µmol g-1 sample. Total polyphenols were determinated by UV/Vis spectroscopic method using Folin-Ciocalteau reagent and total phenolics were in the ranged from 9.40 to 26.29 mg g-1 d.w. Antioxidative capacity was measured by the oxygen radical absorbance capacity (ORAC) method. Higher antioxidant activity had samples with a higher total amount of phenolics.
