Određivanje prisutnosti bakterije Listeria monocytogenes u svježem kravljem siru standardnim metodama

Abstract

Cilj ovog rada je bio odrediti moguću prisutnost bakterije Listeria monocytogenes u uzorcima svježeg kravljeg sira horizontalnom metodom dokazivanja, a u uzorcima pozitivnim na prisutnost bakterije Listeria monocytogenes metodom brojenja odrediti broj živih stanica izoliranih sojeva, te biokemijskom identifikacijom odrediti vrstu. Dobiveni rezultati su uspoređeni s kriterijima navedenim u važećoj legislativi Republike Hrvatske. Ukupno je istraženo 30 nasumično odabranih uzoraka svježeg kravljeg sira koji su bili dostupni na zagrebačkim tržnicama. U jednom od 30 uzoraka je utvrđena prisutnost bakterije Listeria monocytogenes, a u tri uzorka je utvrđena prisutnost Listeria innocua.

Abstract (english)

The purpose of this work was to determine possibility of pressence of Listeria monocytogenes bacteria in fresh cow's cheese samples with horizontal method of proveing, and in samples which are positive on pressence of Listeria monocytogenes with method of counting, determine the number of living cells of bacterial strain and with biocemical identification, determine their species. The given results are compared with already named criteria in legislation of Republic of Croatia. It has been researched randomly in total 30 choosen samples of fresh cow's cheeses which were available on the markets in Zagreb. In one of the samples has been confirmed the pressence of Listeria monocytogenes bacteria and in three more the pressence of Listeria innocua.
