Abstract
Cilj ovog diplomskog bio je izraditi tehničko- tehnološki projekt procesa proizvodnje mlijeka. Navedeni su principi odnosno tehnološki procesi koji uključuju prijem mlijeka, pasterizaciju, standardizaciju i sterilizaciju. Navedene su i usporedbe ovčjeg i kozjeg mlijeka kako bi se uvidjele razlike nutritivne vrijednosti odnosno prehrambenog statusa takvog proizvoda. Zbog specifičnosti proizvodnje u ovom diplomskom radu izrađen je tehničko – tehnološki projekt mljekare.
Abstract (english)
Graduation this goal was to create a technical – technological project on the process of milk production. Principles, i.e. technological processes including milk reception, pasteurization, standardization and sterilization have been determined. In addition, sheep's and goat's milk have been compared for the purpose of recognizing the differences in nutritional values, i.e. in the nutritional status of such a product. Due to the specific production, a technical-technological project of a diary plant has been developed in this graduate thesis as well.
