Abstract | U ovom diplomskom radu provedene su fizikalno-kemijska i sitena analiza sitnijih i krupnijih uzoraka pšenične krupice, pšeničnog krupičastog brašna, pšeničnog bijelog (T-400 i T-550) i pšeničnog polubijelog brašna (T-850) da bi se utvrdilo kako granulometrijski sastav proizvoda utječe na promjenu fizikalno-kemijskog sastava. Fizikalno-kemijske analize obuhvaćale su određivanje količine vlage, proteina, masti, pepela, celuloze, vlažnog glutena, stupnja kiselosti, Fe, Ca, vitamina B1 i B2, Hagbergovog broja padanja, škroba, reoloških parametara u uzorcima mlinskih proizvoda, a sitena analiza je provedena na laboratorijskom planskom situ, tip "LPS". Korištena su sita promjera očica 630, 450, 350, 250, 200, 140 i 100 µm. Rezultati analiza su pokazali da fizikalno-kemijski sastav pšeničnih mlinskih proizvoda ovisi o kemijskom sastavu pšenice i o granulometrijskom sastavu. Dokazano je da se nutritivne vrijednosti i kemijski sastav unutar istog tipa proizvoda ne mijenjaju, bez obzira na granulaciju. |
Abstract (english) | The topic of this diploma paper is physical, chemical and particle size analysis of finer and bigger samples of wheat grits, wheat grit flour, white wheat ( T-400 and T-550) and half white flour ( T-850) to establish how the granulometric composition of the product influences the change in the physical and chemical composition. The physical and chemical analysis included determining moisture content, protein, fat, ashes, cellulose, gluten, level of acidity, Fe, Ca, vitamins B1 and B2, the Hagberg falling number, starch, rheological properties in the samples of milling products. The granulometric analysis was carried out on the “LPS” sieve. The sieve used had eyelets of diameters 630, 450, 350, 250, 200, 140 i 100 µm. The results of the analysis showed that the physical and chemical composition of wheat milling products depends on the chemical composition of wheat, as well as on the granulometric composition. It was proved that the nutritious value and the chemical composition within the same type of product do not change depending on the granulation. |
