Određivanje enterotoksina bakterije Staphylococcus aureus u odabranim rizičnim namirnicama

Abstract

Značajan broj bolesti povezanih s hranom uzrokovan je unošenjem enterotoksina Staphylococcus aureus. Svrha ovog rada bila je istražiti postojanje enterotoksina bakterije Staphylococcus aureus u rizičnim namirnicama (sirovo mlijeko, kolači, meso i mesni proizvodi). U 17 od 68 uzoraka (25 %) istraživanih namirnica sa sigurnošću je dokazana prisutnost bakterije Staphylococcus aureus. U 2 od 68 uzoraka (2,941 %) istraživanih namirnica dokazana je prisutnost enterotoksina. U sirovom mlijeku pronađen je enterotoksin tipa C dok je u mljevenoj svinjetini pronađen enterotoksin tipa D. Na osnovi provedenih istraživanja i dobivenih rezultata, a sukladno praksi EU, nužno je uvođenje HACCP sustava te također provedba testiranja na enterotoksine u rizičnim namirnicama.

Abstract (english)

A significant number of foodborne diseases are caused by ingestion of staphylococcal enterotoxins. The aim of this work was to detect staphylococcal enterotoxins in food samples (raw milk, cakes, meat and meat products). Staphylococcus aureus was detected in 17 of 68 (25 %) samples. Staphylococcal enterotoxins were found in 2 of 68 (2,941 %) tested samples. Staphylococcal enterotoxin C was found in a raw milk sample and staphylococcal enterotoxin D was found in minced pork. Considering this research and achieved results, implementation of HACCP system and testing for staphylococcal enterotoxins in food are necessary.
