Abstract

Metionin je esencijalna aminokiselina koja sadrži sumpor i neophodna je za rast i razvoj svake žive stanice. U ljudski organizam se unosi hranom i sudjeluje u jednom od osnovnih metaboličkih procesa stanice, procesu metilacije. Najvažniji derivat metionina je S-adenozil-L-metionin, najaktivniji metilni donor u mnogim, za život neophodnim reakcijama. Dodatak D, L-metionina u hranjivu podlogu za rast i razvoj kvasaca utječe i na povećani rast kvaščeve biomase. Poznato je da aminokiseline imaju nutritivnu vrijednost, u hranjivim podlogama služe i kao izvori dušika, ugljika, a metionin i kao izvor sumpora. Cilj ovog rada bio je proučiti utjecaj koncentracije D, L-metionina na kinetiku prirasta biomase kvasaca Saccharomyces uvarum LVK1, Candida utilis CUM te Kluyveromyces lactis KL71 te proizvodnje alkohola u glukoznoj i laktoznoj sintetskoj podlozi. Rezultati su pokazali da dodatak metionina povoljno utječe na rast kvasca. Najveći prirast biomase imao je kvasac Kluyveromyces lactis uzgojen na laktoznoj podlozi (5,56 g/L) dok je najmanji prirast imao kvasac Candida utilis (3,9 g/L) koji je uzgojen na glukoznoj sintetskoj podlozi.

Abstract (english)

Methionine is an essential amino acid. It contains sulphur and it is necessary for the growth and development of every living cell. Methionine is brought into human organism through food and it is involved in one of the basic methabolic processes in the cell, i.e. methilation. The most important compound derived from methionine is S-adenosyl-L-methionine, the most active methile donor in many reactions that are necessary for normal functioning of the cell. Adding D, L-methionine into growth media and development of yeasts results in increased yeasts biomass production. Amino acids are well-known for their nutritional value and in growth media they serve as a source of nitrogen, carbon, and in the case of methionine also sulphur. The aim of this paper was to study the effect of varying concentrations of D, L-methionine on the kinetic of yeast biomass production and alcohol fermentation with the yeasts Saccharomyces uvarum LVK1, Candida utilis CUM and Kluyveromyces lactis KL71 in a glucose and lactose synthetic media. The results have shown that adding D, L- methionine has a positive effect on yeast growth. Kluyveromyces lactis yeast grown on lactose media had the biggest biomass growth (5,56 g/L), while Candida utilis, grown on glucose synthetic media, had the least favourable effect (3,9 g/L).
