Abstract

Med kao cjelovita namirnica bitnih nutritivnih i ljekovitih svojstava za čovjeka mora zadovoljavati određene kriterije za kakvoću. Oni se određuju analizama koje se sastoje od: senzorske analize, fizikalno-kemijske analize i mikrobioloke analize. Cilj ovog rada bio je odrediti određene fizikalno-kemijske parametre; aktivnosti enzima invertaze i dijastaze u 67 uzoraka meda. Svi uzorci su bagremov med (Robinia pseudoacacia L.) sakupljeni na području Hrvatskog Zagorja i čuvani na sobnoj temperaturi kroz period od godinu dana. Ustanovljeno je da se aktivnost invertaze kretala u rasponu od 1,1 do 5,6 IN, a aktivnost dijastaze između 6,8 do 12,9 DN. Primjećeno je da je aktivnost invertaze preniska kod velikog broja uzoraka, to je primarno posljedica predugog skladitenja meda prije analize. Aktivnost dijastaze je zadovoljavajuća s obzirom na kriterije za kakvoću. Velikih odstupanja unutar različitih uzoraka bagremovog meda nema.

Abstract (english)

Honey as a complete food with important nutritional and therapeutic properties for human has to satisfy certain criteria for quality. They are specified by analysis which are: sensory analysis, physical-chemical analysis and microbiological analysis. The objective of this study was to determine certain physical-chemical parameters; activity of enzymes invertase and diastase of 67 honey samples. All samples were acacia honey (Robinia pseudoacacia L.) collected from area Hrvatsko Zagorje and kept at room temperature throughout the period of one year. It was found that the mass content of the invertase activity varied from 1,1 to 5,6 IN and diastase activity between 6,8 and 12,9 DN. It was noticed that invertase activity is too low in great amount of samples, what is primary attributed to long period of storage of honey before analysis. Diastase activity satisfies requirements regarding criteria for quality. Significant differences between different samples of acacia honey were not found.
