Abstract

Ukupni polifenoli u voćnim sokovima određivani su elektrokemijski diferencijalnom pulsnom voltametrijom. Elektrokemijsko određivanje polifenola temelji se na elektrokemijskoj oksidaciji polifenola na grafitnoj elektrodi. Jakost struje pri oksidacijskom potencijalu polifenola je proporcionalna njihovoj koncentraciji, pa je to svojstvo korišteno za određivanje koncentracije polifenola u uzorcima. Određivanje polifenola diferencijalnom pulsnom voltametrijom uspoređeno je sa standardnom Folin-Ciocalteauovom spektrofotometrijskom metodom mjerenja ukupnih polifenola. U obje metode kao referentni polifenoli su korišteni galna kiselina i pirokatehol.

Abstract (english)

Total polyphenols in fruit juices were determined by electrochemical differential pulse voltammetry. Electrochemical determination of polyphenols is based on electrochemical oxidation of polyphenols at graphite electrode. Current at oxidation potential of polyphenols is proportional to their concentration, so that property was used for determination of polyphenol concentration in the samples. Determination of polyphenols by means of differential pulse voltammetry was compared to a standard spectrophotometric method of measuring total polyphenols by means of Folin-Ciocalteau reaction. In both methods as referent polyphenols were used gallic acid a pyrocatechol.
