Abstract

Miješanje je operacija koja se koristi u raznim granama industrije, a osobito u prehrambenoj s ciljem dobivanja homogenih smjesa. Cilj nam je bio u smjesama koje se mogu koristiti za specijalne vrste kruha, utvrditi utjecaj veličine čestica na homogenost smjese, te odrediti optimalno vrijeme miješanja. Vidljivo je da je „Turbula“ mješalica pogodna za ovakvu vrstu smjese jer se homogenost postiže u kratkom vremenu mješanja i to između 20 i 70 sekundi. Razlika u veličini čestica nema bitan utjecaj na homogenost koja je u svim kombinacijama zadovoljavajuća.

Abstract (english)

The mixing is a proces applied in a different branches of industry especially in food industry with a purpose of getting a homogenous mixture. The main goal of this graduation paper was to study the influence of particle size on homogeneity in a two-part bakery mixture and to determine optimal time of mixing. „Turbula“ is evidently suitable for this kind of mixtures because homogeneity can be reached between 20 and 70 seconds of mixing. Particle size difference has no considerable effect on homogeneity which is satisfactory in all combinations.
