Abstract
Polifenolni spojevi jedni su od najznačajnijih sastojaka vina i direktno su povezani sa bojom, trpkoćom i antioksidacijskim karakteristikama, poznatim po pozitivnom utjecaju na zdravlje. Cilj ovog rada bio je odrediti polifenolni sastav mošta sorte Chardonnay. Uzorci mošta uzeti su u tri verzije: K, POS, PR. Uzorci su analizirani tehnikom tekućinske kromatografije visoke djelotvornosti (HPLC) uz PDA detekciju. Rezultati istraživanja pokazuju da je udio polifenolnih spojeva najveći u uzorku PR.
Abstract (english)
Polyphenols are among the most important ingredients of wine and are directly correlated with the color, astringency and antioxidative properties, known for their positive impact on the health. The objective of this research was to determine the polyphenol content in Chardonnay musts. Musts samples were taken in three variants: K, POS, PR. Samples were analyzed by high performance liquid chromatography (HPLC) with PDA detection. Research showed that concentration of polyphenols is highest in must sample PR.
