Abstract | Cilj ovog rada bio je ispitati maseni udio polifenola i antioksidacijski kapacitet u različitim introduciranim sortama šljive: Topfive, Topstar plus, Topgigant plus, Topking, Top 2000, Toptaste, Topend, Topper, Hanita, Rhein Gold, Pitestean, President, Čačanska Ljepotica, Valor, Stanley, Haganta, Čačanska Rodna i Jojo nabavljenih u suradnji sa Hrvatskim centrom za hranu, poljoprivredu i selo-Zavod za voćarstvo. Određivani su maseni udjeli ukupnih fenola, flavonoida i neflavonoida spektrofotometrijski, dok je antioksidacijski kapacitet (AOC) određen primjenom FRAP i DPPH metoda. Maseni udio ukupnih fenola u istraživanim sortama značajno je varirao od najniže vrijednosti 1,92 mg g-1 s.tv. koja je određena kod sorte Hanita do najviše 13,54 mg g-1 s.tv. kod sorte Topend. S obzirom na vrijeme dozrijevanja, najviši maseni udio ukupnih fenola određen je u kasnim sortama šljive, dok je najniţi određen u ranim sortama. Vrijednost AOC određena FRAP metodom značajno je varirala od najniže vrijednosti 65,53 μg g-1 s.tv. određene kod sorte Rheingold do najviše 217,89 μg g-1 s.tv. kod sorte Topfive. Najviša vrijednost AOC, u ovisnosti o skupinama, određena je kod kasnih sorata šljive, a najniža kod ranih sorata šljive. AOC ekstrakata fenolnih spojeva šljiva u pozitivnoj je korelaciji sa masenim udjelima polifenolnih spojeva. |
Abstract (english) | The aim of this research was determined mass fraction of polyphenols and antioxidant capacity of the introduced plum cultivars: Topfive, Topstar plus, Topgigant plus, Topking, Top 2000, Toptaste, Topend, Topper, Hanita, Rhein Gold, Pitestean, President, Čačanska Ljepotica, Valor, Stanley, Haganta, Čačanska Rodna i Jojo obtained in cooperation with Croatian Centre for Agriculture, Food and Rural Affairs- Institute of Pomology. The mass fraction of total phenols, total flavonoids and total nonflavonoids were determined using spectrophotometric method, while antioxidant capacity (AOC) was determined using, FRAP and DPPH methods. The content of total phenols in the investigated plum cultivars significantly varied from the lowest value of 1.92 mg g-1 dry weight (d.w.), determined by the cultivar Hanita up to 13.54 mg g-1 d.w., determined by the cultivar Topend. With regard to the time of ripening, the highest content of total phenols was determined in the late ripening cultivars of plum, while the lowest was determined in the early ripening cultivars of plum. Value AOC determined by FRAP method significantly varied from the lowest value of 65.53 μg g-1 d.w. determined by the cultivar Rheingold up to 217.89 μg g-1 d.w. determined by the cultivar Topfive. The highest value of the AOC, depending on the time of of ripening, was determined in the late ripening cultivars of plum, and lowest in the early ripening cultivars of plum. AOC of plum extracts highly correlated with the concentration of the polyphenolic compounds. |
