Abstract

Aronija je jedna od biljaka s najvišim udjelom polifenolnih komponenata te pokazuje mnogobrojnu biološku aktivnost. Plodovi aronije pokazali su pozitivan učinak kod prevencije kardiovaskularnih bolesti, dijabetesa, raka debelog crijeva, a pokazalo se da ima i kemopreventivan učinak. Za takav doprinos odgovorne su polifenolne tvari od kojih najveći udio čine antocijani, proantocijani i flavonoli. Cilj ovog rada bio je određivanje antioksidacijskog kapaciteta uzoraka aronije. U tu svrhu ispitan je sok i svježa aronija, kojima je određen udio ukupnih fenola, flavonoida, antocijana i antioksidacijski kapacitet. Udjel ukupnih fenola određen je reakcijom s Folin-Ciocalteu reagensom. Antioksidacijski kapacitet određen je reakcijama sa željezo(III)-tripiridiltriazina (FRAP) i 1,1-difenil-2-pikrilhidrazil radikala (DPPH). Svježa aronija pokazala je najveći antioksidtivni kapacitet te sadrži najviše ukupnih fenola, flavonoida i antocijana.

Abstract (english)

Aronia melanocarpa fruits (Rosaceae) are one of the richest plant sources of phenolic substances, and it has been shown to have various biological activities. Berries of A. Melanocarpa (chokeberry) have been supposed to be beneficial for the prevention of cardiovascular events, diabetes, colon cancer, and also have chemopreventive potential. The compounds which are responsible for positive effects of chokeberries are polyphenolic compounds. Chokeberries contain a large amount of polyphenolic compounds in comparison to other fruits .These bioactive compounds belong to several groups. In chokeberries, proanthocyanins, anthocyanins and flavonols are among the most numerous. The aim of this study was to examine antioxidative capacity of aronia extract. For that cause, aronia juice and fresh aronia fruit, were tested to determine a concentration of total phenols, flavonoids, anthocyanins and antioxidative capacity. The concentration of total phenols was determined by using a reaction with Folin-Ciocalteu reagent while the antioxidative capacity was determined by using reactions with iron(III)-tripyridyilitrazine (FRAP)radical and 1,1-diphenyl-2-picrylhydrazyl radical (DPPH). Fresh aronia fruits show the highest antioxidative capacity and contain the largest concentration of total phenols, flavonoids and anthocyanins.
