Abstract

Kod današnje prehrane zahtjeva se da hrana ne sadrži samo hranjive tvari već da sadrži i spojeve koji doprinose zdravlju. Ti su spojevi bioaktivne komponente. One se nalaze i u ulju. No dolazi do gubitka tih tvari tokom rafinacije te se jestiva rafinirana ulja ne smatraju bogatim bioaktivnim tvarima. Kod ulja koja se hladno prešaju i naknadno ne rafiniraju bioaktivne komponente ostaju sačuvane. U ovom radu se proučava hladno prešana ulje lana, lješnjaka i suncokreta. posebna pozornost se obratila na bioaktivne komponente i na koji način te bioaktivne komponente nadopunjuju hranjivost i zdravstvene učinke tih ulja.

Abstract (english)

Modern diet demands that food not only to contain nutritional compounds but also to contain compounds which contribute to health. These compounds are bioactive components. Oil also contains these compounds. During refining of oil there is loss of these compounds and edible oils are not considered to be rich with bioactive compounds. Cold pressed oils are not refined and these components remain in oil. This work studies cold pressed oils of flaxseed, hazelnut and sunflower. Special focus was given to the bioactive components of these oils and how do these components supplement nutritional value and health effects of these oils.
