Abstract

Određivanje proteina u prehrambenim proizvodima je kompleksno, a u okviru metoda određivanja ukupnih proteina indirektno preko dušika metodom po Kjeldahl-u ima najširu primjenu u praksi. Tijekom ovog istraživanja primijenjena je s ciljem određivanja udjela proteina u uzorcima različitih visokoproteinskih pločica (n = 19), a dobivene analitičke vrijednosti uspoređene su sa podacima o sadržaju proteina navedenim u okviru nutritivnih deklaracija analiziranih proizvoda. Rezultati su pokazali kako se udio proteina kretao u rasponu od 31,84 % do 53,53 %, a utvrđena odstupanja od deklariranog udjela proteina iznosila su od 0,53 % do 2,36 % za uzorke s pozitivnim odstupanjem, te od 0,65 % do 3,03 % za uzorke s negativnim odstupanjem.

Abstract (english)

Protein determination in food products is complex, and within the framework of total protein determination methods indirectly through nitrogen, the Kjeldahl method is most commonly used in practice. During this study, it was applied to determine the protein content in samples of different high-protein bars (n = 19), and the obtained analytical values were compared with the protein content data provided within the nutritional declarations of the analysed products. The results showed that the protein content ranged from 31.84 % to 53.53 %, and the detected deviations from the declared protein content ranged from 0.53 % to 2.36 % for samples with positive deviation, and from 0.65 % to 3.03 % for samples with negative deviation.
