Abstract

Zbog različitih klimatskih uvjeta i raznolikosti vegetacije, na području Republike Hrvatske postoje povoljni uvjeti za proizvodnju različitih vrsta meda. U ovom istraživanju su analizirani para-metri kvalitete 8 uzoraka medljikovca, 6 uzoraka meduna i 6 uzoraka šumskog meda, podrijetlom iz Republike Hrvatske iz sezone 2021. Fizikalno-kemijski parametri su pri tome uključivali: maseni udio vode, električnu provodnost, kiselost, maseni udio hidroksimetilfurfurala, maseni udio reducirajućih šećera i maseni udio saharoze. Rezultati analiza, uspoređeni sa Pravilnikom o medu, pokazali su kako svi uzorci meda zadovoljavaju pravilnikom propisane vrijednosti za udio vode, električnu provodnost, kiselost, maseni udio hidroksimetilfurfurala i maseni udio saharoze. Svi uzorci, osim 2 uzorka šumskog meda, zadovoljavaju Pravilnikom propisane vrijednosti za maseni udio reducirajućih šećera.

Abstract (english)

Due to the different climatic conditions and the vegetation diversity, there are favourable conditions for the production of different types of honey in the territory of the Republic of Croatia. In this research, the quality parameters of 8 honeydew samples, 6 “medun” honey samples, and 6 forest honey samples, originating from the Republic of Croatia from the 2021 season, were analysed. Physi-cochemical parameters included: water content, electrical conductivity, acidity, hydroxymethylfurfural content, reducing sugars content and sucrose content. The results of the analyses, compared with the Croatian regulations, showed that all honey samples meet the values prescribed by the Croatian regula-tion for water content, electrical conductivity, acidity, hydroxymethylfurfural content and sucrose con-tent. Also, all samples, except for 2 samples of forest honey, meet the values prescribed by the Croatian regulation for the reducing sugars content.
