Abstract

Cilj ovog rada bio je odrediti fizikalno-kemijske parametre 20 uzoraka meda s područja Republike Hrvatske iz 2021. godine i usporediti ih sa zahtjevima Pravilnika o medu (2015). Ispitani su sljedeći fizikalno kemijski parametri: maseni udio vode, električna provodnost, kiselost, maseni udio reducirajućih šećera, maseni udio saharoze i maseni udio hidroksimetilfurfurala (HMF) za uzorke meda od bagrema (4), kadulje (4), lipe (4), suncokreta (2), amorfe (1), heljde (1), uljane repice (1), mandarine (1), vrbe (1) i zlatošipke (1). Analiza je provedena metodama koje je propisala Međunarodna komisija za med. Obradom rezultata donesen je zaključak da svi uzorci zadovoljavaju kriterije propisane Pravilnikom o medu.

Abstract (english)

The aim of this paper was to determine the physico-chemical properties of 20 honey samples collected in the Republic of Croatia in 2021 and compare the obtained values with requirements of Croatian honey regulations. The following physico-chemical parameters were examined: mass fraction of water, acidity, electrical conductivity, mass fraction of reducing sugars, sucrose, and hydroxymethylfurfural, for certain types of honey: black locust (4), sage (4), linden (4), common sunflower (2), desert false indigo (1), buckwheat (1), rapeseed (1), mandarin (1), willow (1), and goldenrod (1). All of the used methods were appointed by the International Honey Commission (IHC). After the conducted analysis, it was concluded that all of the samples meet the requirements of honey regulations.
