Abstract

Alkoholna industrija predstavlja jednu od najprofitabilnijih industrija današnjice, s velikim tržištima u Europi, Sjevernoj Americi i Aziji. Republika Hrvatska ne zaostaje u ovom pogledu za ostatkom svijeta, već i ona ima dugu tradiciju proizvodnje alkoholnih pića poput vina, piva i rakija sa značajnom količinom noviteta u području jakih alkoholnih pića poput džina, viskija, vodke i sl. Ovaj rad prikazuje Elaborat tehničko – tehnološkog rješenja destilerije za proizvodnju single malt viskija. Single malt je viski proizveden od jedne vrste žitarica, u ovom slučaju ječma, u jednoj destileriji, te je jedan od najpopularnijih vrsta viskija na svijetu. Najpoznatiji viskiji u ovoj kategoriji su škotski viskiji vrhunske kvalitete. Na temelju projektnog zadatka, obrađeni su podaci o optimalnoj lokaciji, potrebnoj opremi i radnoj snazi, izračunate bilance te je tehnološki proces opisan i prikazan pomoću blok sheme. Elaborat također sadrži tlocrtni prikaz i situacijski plan proizvodnog pogona.

Abstract (english)

The alcohol industry represents one of the most profitable industries of today, with largest markets in Europe, North America and Asia. The Republic of Croatia is not lagging behind in this regard, as it has a long tradition of producing alcoholic beverages such as wine, beer and schnapps, along with a significant number of innovations in the field of strong alcoholic beverages like gin, whisky, vodka and others. This paper presents a technical – technological solution report for a distillery producing single malt whisky. Single malt is a whisky made from one type of grain, in this case barley, in a single distillery, and is one of the most popular types of whisky in the world. The most well-known whiskies in this category are top quality Scottish whiskies. Using the project assignment, data on the optimal location, necessary equipment and workforce are processed, balances were calculated, and the technological process was described and illustrated using a block scheme. The paper also includes a facility layout plan and a site plan of the production facility.
