Abstract

U ovom istraživanju provedeno je ispitivanje utjecaja različite vrste ambalaže na organoleptička svojstva piva. Pivo je skladišteno na temperaturi ispod 18°C u tamnoj prostoriji. Tijekom skladištenja kroz 8 tjedana u pivu je praćena promjena koncentracije trans-2-nonenala kao indikatora procesa oksidacije (starenja) piva. Provedeno je i organoleptičko ocjenjivanje piva kroz 6 tjedana uz sudjelovanje 9 iskusnih organoleptičkih ispitivača piva. Na osnovi rezultata ovog istraživanja može se zaključiti da je brzina oksidacije (starenja) piva u staklenim bocama i limenkama bila na približno jednakoj razini, a najveće brzine oksidacije piva zabilježene su kod piva čuvanog u PET bocama.

Abstract (english)

In this research, the effect of the package type on the lager beer organoleptic properties during storage was studied. The beer was stored in a dark room at a temperature below 18°C. During the 8 weeks storage period the concentration of trans-2-nonenal, a well known indicator of oxidation processes in beer, was monitored. Sensory evaluation of beer was also performed by experienced sensory evaluators. On the basis of these results it is clear that the beer ageing (oxidation) rate in glass bottles and cans was at approximately similar level. However, the highest beer ageing rate was observed during beer storage in PET bottles.
