Usporedbe baza podataka o kemijskom sastavu namirnica u procjeni nutritivne ponude bolničkih dijeta

Abstract

Procjena prehrane podrazumijeva analizu unosa svih pojedinih namirnica unesenih jelom, a omogućava usporedbu s preporukama koje sadrže informacije o preporučenom dnevnom unosu energije i nutrijenata. Cilj ovog rada je analiza jelovnika različitih dijeta (dijabetičke, mediteranske i pankreatične) i definiranje njihove energetske i nutritivne razlike u odnosu na preporuke, te usporedba jelovnika iste dijete primjenom različitih baza podataka o kemijskom sastavu namirnica. Jelovnici navedenih triju bolničkih dijeta, koje se primjenjuju u KB Dubrava, analizirane su pomoću tri baze podataka – hrvatske, USDA i danske. Kako bi se uvidjele potencijalne razlike u sezonskoj ponudi analizirano je po sedam jelovnika iz sezone proljeće/ljeto i jesen/zima. Energetski unos je u skladu s preporukama u dijabetičkoj dijeti, dok u drugim dvjema dijetama odudara od preporuka barem u jednoj bazi podataka. U svim dijetama je unos masti u skladu s preporukama, dok je unos ugljikohidrata niži od preporuka samo prema hrvatskoj bazi podataka u sezoni jesen/zima kod pankreatične dijete. Unos proteina odstupa od preporuka barem u jednoj bazi podataka u svim analiziranim jelovnicima navedenih dijeta. Prosječan dnevni unos niacina, vitamina B6 i vitamina C je u skladu s preporukama u dijabetičkoj i pankreatičnoj dijeti. Unos kalcija koji nije niži od preporuka dobiven je jedino analizom jelovnika u USDA bazi podataka u sezoni proljeće/ljeto u mediteranskoj i pankreatičnoj dijeti.

Abstract (english)

Nutritional assessment implies an analysis of food intake of every single food consumed during the meal which allows a comparison with the recommendations which contain information about the recommended daily allowance of energy and nutrients. The aim of this study was to analyze the menu of different diets (diabetic, Mediterranean and pancreatic) and to define their energy and nutritional differences in regard to the recommendations, and a comparison of the menu of the same diet using different food composition databases. Menus of those three hospital diets, which are applied in Clinical Hospital Dubrava, were analyzed using three databases – Croatian, USDA and Danish. Seven menus of the season Spring/Summer and Autumn/Winter were analyzed in order to gain insight into potential differences in the seasonal offer. Energy intake was in harmony with the recommendations in diabetic diet, while there were deviations in at least one database in the other two diets. In all diets the fat intake was in accordance with the recommendations, while carbohydrate intake was lower than recommended only in a case when Croatian database was used, specifically in the season Autumn/Winter in pancreatic diet. Protein intake deviates from the recommendations in at least one database in all the menus of above mentioned diet. The average daily intake of niacin, vitamin B6 and vitamin C is in accordance to the recommendations in diabetic and pancreatic diet. Calcium intake below recommendations was obtained only by analyzing menu using the USDA database for the season Spring/Summer in the Mediterranean and pancreatic diet.
