Abstract

Kvaliteta meda znatno utječe na nutritivnu vrijednost meda u ljudskoj prehrani, a određuju je mnogi parametri koje se ispituju različitim fizikalno-kemijskim metodama u cilju zaštite potrošača. Cilj ovog rada bio je odrediti karakteristične parametre kvalitete meda kao što su maseni udjel vode, kiselost, električnavodljivost, maseni udjel reducirajućih šećera, maseni udjel saharoze i maseni udjel hidroksimetilfurfurala. Parametri su određeni u 133 uzorka različitih vrsta meda podrijetlom iz Republike Hrvatske iz sezone 2012, kao što su medljikovac, cvjetni med, livadni med, šumski med te med bagrema, lipe, kestena, kadulje, suncokreta i zlatošipke. Rezultati pokazuju da većina uzoraka meda udovoljava zahtjevima Pravilnika.

Abstract (english)

Quality of honey has great affect on its nutritive value in human diet, and is determine by many parameters which are analyzed by physical-chemical methods towards consumer protection. The objective of this study was to determine characteristic parameters like water content, acidity, electrical conductivity, reducing sugars and sucrose content and 5-hydroxymethylfurfuralaldehide content. These parameters were determined in 133 of various honey samples within area of the Republic of Croatia from season 2012, such as honeydew, floral, meadow, forest, acacia, lime, chestnut, sage, sunflower and goldenrod honey. The results show that majority of samples satisfy conditions given by the regulation.
