Sažetak | U ovom radu određen je kemijski sastav 21 sorte lješnjaka uzgajanih u Hrvatskoj te su dobiveni rezultati uspoređeni s rezultatima drugih znanstvenih radova. Dobiveni rezultati su: maseni udio vode od 1,99 % do 3,06 %, maseni udio pepela od 2,0 % do 2,74 %, maseni udio masti od 59,0 % do 74,36 %, maseni udio proteina od 10,28 % do 15,91 % te udio ugljikohidrata od 9,45 % do 21,48 %. Utvrđena su podudaranja u odnosu na rezultate drugih radova, ali i razlike koje se mogu obrazložiti brojnim faktorima poput geografskog podrijetla, različite sorte, klime, poljoprivredne tehnike uzgoja, vrste tla, smještaja voćnjaka, načina upravljanja i skladištenja plodova i slično. |
Sažetak (engleski) | In this paper, the chemical composition of 21 hazelnut cultivars grown in Croatia was determined and the obtained results were compared with the results from other scientific papers. The results were: moisture content from 1,99 % to 3,06 %, ash content from 2,0 % to 2,74 %, fat content from 59,0 % to 74,36 %, protein content from 10,28 % to 15,91 % and carbohydrates content from 9,45 % to 21,48 %. Similarities were found in relation to the results from other scientific papers but also differences that can be explained by numerous factors such as geographical origin, different varieties, climate, agricultural cultivation techniques, soil type, orchard location, methods of fruit management and storage, etc. |
