Sažetak | Tijekom ovog istraživanja analiziran je 21 uzorak različitih vrsta meda hrvatskog podijetla (Varaždinska županija, sezona 2010) i to med kestena, med lipe, cvjetni i livadni med te uniflorni medovi facelije, kadulje i lavande. Određen je udjel ukupnih fenola modificiranom Folin-Ciocalteu metodom, te antioksidacijska aktivnost pomoću dvije metode, DPPH i FRAP. Sadržaj ukupnih fenola kretao se u rasponu 104,13–342,22 mg GAE/kg meda (kesten), 36,45–55,81 mg GAE/kg meda (lipa), 55,44–88,84 mg GAE/kg meda (cvjetni med), 67,81–136,62 mg GAE/kg meda (livadni med), 71,89–155,50 mg GAE/kg meda (uniflorni med); "radical scavenging" aktivnost izražena kao IC50 vrijednost, u rasponu 0,28–13,32 mg/mL (kesten), 17,13–18,19 mg/mL (lipa), 11,23–15,35 mg/mL (cvjetni med), 0,33–21,71 mg/mL (livadni med), 0,44–3,68 mg/mL (uniflorni med); a antioksidacijska aktivnost izražena kao FRAP vrijednost, u rasponu 3,78–35,21 μM Fe(II) 10% otopine meda (kesten), 4,24–30,08 μM Fe(II) 10% otopine meda (lipa), 7,40–12,39 μM Fe(II) 10% otopine meda (cvjetni med), 6,39–27,62 μM Fe(II) 10% otopine meda (livadni med), 8,19–31,17 μM Fe(II) 10% otopine meda (uniflorni med). |
Sažetak (engleski) | This paper analyzed 21 sample of different types of honey from Croatia (Varaždin, season 2010): chestnut honey, lime-tree honey, flower and meadow honey and unifloral honeys from facelije, sage and lavender. It was determined a phenolic content by modified Folin-Ciocalteu method, and antioxidant activity using two methods, DPPH and FRAP.
