Abstract
Cilj ovog rada bio je odrediti količinu ukupnih polifenola u uzorcima voćnih vina od kupine, višnje, borovnice, jagode, maline, jabuke i crnog ribizla, te ih međusobno usporediti. Uzorci su se uzimali iz voćnih vina prisutnih na hrvatskom tržištu. Za određivanje ukupnih polifenola koristile su se spektrofotometrijske metode. Pokazalo se da je količina ukupnih polifenola u uzorcima voćnih vina od bobičastog voća prilično velika, uz izuzetak voćnog vina od borovnice koje je pokazalo malu količinu ukupnih polifenola, isto kao i voćno vino od jabuke.
Abstract (english)
The aim of study was to determine the amount of total polyphenols in samples of blackberry, cherry, blueberry, strawberry, raspberry, apple and black currant wine and compare them with each other. Samples were taken from fruit wines present on the Croatian market. Spectrophotometric methods were used to determine the total polyphenols. It has been shown that the amount of total polyphenols in samples of fruit wines from berries rather large with the exception of the blueberry fruit wine that showed a small amount of total polyphenols, as well as fruity wine from apples.
