Abstract

Cilj ovog rada bio je ispitati razlike u sastavu sterola bučinih ulja različitog geografskog porijekla. Sastav sterola utvrđen je metodom HRN EN ISO 12228:2004. Analizirana su 53 uzorka iz 10 županija kontinentalne Hrvatske pri čemu je bilo zastupljeno 5 kultivara, samostalno ili u kombinaciji. Kod svih uzoraka utvrđeni su udjeli 13 različitih sterola te je određena ukupna količina sterola u mg kg-1. Dobiveni podaci statistički su analizirani te je utvrđena statistički značajna razlika kod udjela kampestanola, stigmastadienola i Δ7-avenasterola s obzirom na županiju iz koje dolaze, dok je s obzirom na kultivare razlika utvrđena u udjelu 24-metilenkolesterola, kampestanola, Δ7-kampesterola, stigmastadienola i Δ7-avenasterola. Isto tako, određena je korelacija između sastava sterola te razlike temperature i količine padalina tijekom ljeta 2020. godine u odnosu na normalu, međutim utvrđena je samo pozitivna korelacija između količine padalina i udjela kampesterola. Provedena je usporedba sastava sterola u odnosu na važeći Pravilnik o jestivim uljima i mastima (2019) te su kod određenih sterola utvrđena odstupanja u odnosu na propisane vrijednosti.

Abstract (english)

The aim of this thesis was to investigate the differences in sterol content between pumpkin seed oils with different geographical origin. Sterol content was determined with HRN EN ISO 12228:2004 method. 53 samples from 10 counties in continental Croatia were analysed with 5 cultivars represented, alone or in combination. The proportions of 13 different sterols and the total amount of sterols in mg kg-1 were determined in all 53 samples. The obtained data were statistically analysed, and a statistically significant difference was found in the content of campestanol, stigmastadienol and Δ7-avenasterol given the county they come from, while difference in the content of 24-methylene cholesterol, campestanol, Δ7-campesterol, stigmastadienol and Δ7-avenasterol was found in the composition of sterols regarding cultivars. Also, the correlation between the composition of sterols and the difference in temperature and in the amount of precipitation during the summer of 2020 in relation to the normal was determined. However, positive correlation was found only between precipitation and campesterol content. A comparison of the composition of sterols in relation to the current Ordinance on edible oils and fats (2019) was performed, and deviations in relation to the prescribed values were determined for certain sterols.
