Abstract

Povećana proizvodnja hrane, i tehnološka revolucija bez naglaska na povećanju učinkovitosti postupaka prerade bila je uobičajena praksa do početka 21. stoljeća te je kao takva imala izrazito štetan utjecaj na okoliš. U današnje vrijeme prehrambena industrija primorana je primijeniti nove strategije, kao što je npr. valorizacija nusproizvoda, kako bi smanjila proizvodnju otpada i potrošnju energije na ekološki prihvatljivu razinu. Lišće šećerne repe se prema dosadašnjim istraživanjima iskazalo kao dobar alternativni izvor proteina. RuBisCO zbog svoje zadovoljavajuće nutritivne i tehno-funkcionalne vrije-dnosti pruža mogućnost približavanju ostvarivanja nekoliko ciljeva održivog razvoja. Prema Agendi 2030, omogućuje budućim generacijama da se lakše nose s posljedicama neizbježnih i ubrzanih klimat-skih promjena koje prijete sigurnosti hrane za sve rastuću ljudsku populaciju. Cilj ovog rada bio je istražiti povezanost valorizacije listova šećerne repe s ciljevima održivog razvoja i analitičke metode kojima se dobiveni protein može učinkovito odrediti.

Abstract (english)

Increasing production of food without stressing the importance of increasing production ef-ficiency was the prevalent policy up until the beginning of the 21st century and as such it had a harmful effect on the environment. Nowadays, the food industry is required to implement new strategies, such as valorisation of by-products, to help lessen it’s waste production and energy demands to an environ-mentally friendly level. According to research, sugar beet leaves have shown to be a great alternative source of protein. RuBisCO, because of it’s satisfactory nutritional and techno-functional values, gives the world a chance to get closer to achieving the sustainability goals of the Agenda 2030 and with it the chance for future generations to bear the inevitable climate change with ease which threatens the food security of the ever-growing population. The goal of this undergraduate thesis was to give an insight into the relation of valorisation of sugar beet leaves and sustainability goals as well as into some ana-lytical methods with which this protein can be efficiently analysed.
