Abstract

Povećanje potrošnje pilećeg mesa, njegov povoljan nutritivni sastav, kao i kontinuirani porast broja stanovnika, razlozi su povećanja proizvodnje pilećeg mesa, te potrebe za alternativnim izvorima hrane za piliće sa svrhom očuvanja okoliša i smanjenja zagađenja. Cilj ovog istraživanja je utvrditi optimalni i maksimalni udio zamjene proteina porijeklom od odmašćenog brašna ličinki crne vojničke muhe (Hermetia illucens) kao nove hrane, koji neće narušiti kondicijsko i zdravstveno stanje pilića i koji će dati ocjenu kvalitete mesa pilića. Rezultatima istraživanja utvrđeno je da je djelomična zamjena proteina soje u hranidbi pilića različitim udjelima proteina odmašćenog brašna H. illucens (15 %, 25 %, 40 %) tehnološki prihvatljiva. Također, prema proizvodnim i tehnološkim pokazateljima, kao i parametrima kvalitete, meso pilića ne pokazuje negativne rezultate u odnosu na meso pilića proizvedeno prema zahtjevima standardnog tova. Obzirom na utvrđeno, udio zamjene proteina odmašćenog brašna H. illucens do 25 % može se smatrati najprihvatljivijim u komercijalne svrhe u tehnologiji proizvodnje pilića, uz prethodno donošenje zakonodavnog okvira te analizu svih ostalih čimbenika koji mogu utjecati na kvalitetu i sigurnost pilećeg mesa, a time i na zdravlje potrošača.

Abstract (english)

Increased consumption of chicken meat, its favorable nutritional composition, as well as the continuous increase in population growth are the reasons for the increase in chicken meat production and the need for alternative sources of chicken feed in terms of environmental protection and pollution reduction. The aim of this study is to determine the optimal and maximal protein replacement rate originated from the defatted black soldier fly (Hermetia illucens) flour, which can be used in chicken feeding without impairing chicken’s fitness and health, and which will give an assessment of the chicken meat quality. The results of the study showed that partial replacement of soy protein in chicken feed with different proportions of H. illucens defatted flour (15%, 25%, 40%) was technologically acceptable. In addition, according to production and technological parameters as well as quality parameters chicken meat does not show negative results in relation to chicken meat produced according to the requirements of standard fattening. Considering the established, the partial protein replacement of defatted H. illucens flour up to 25% may be considered commercially the most accaptable in poultry production technology, with the prior adoption of a legislative framework in this field, analysis of all other factors that may affect the quality and safety of chicken meat, and thus to consumer health.
